A lot of the time, like in OP’s girlfriend’s case, it’s weird and creepy. But it isn’t inherently bad as long as boundaries and lines aren’t crossed.
When I was 19, I had recently dropped out of college and started seasonal work across many different states in the US. The majority of the people I worked with/encountered were significantly older than me. In my situation, we did have things in common; work, skiing, seasonal life, not working a 9-5, etc.
Sure I dealt with some creepy 30+ year olds at times, but that wasn’t the case for a lot of my friends at that job. One of my good friends there was 50, but lines were never crossed. He was there at this job making money for his kid, going through a divorce and going on dating apps to try to find someone his own age. We talked every day, occasionally saw each other outside of work, but no lines were crossed. He wasn’t feeding me alcohol and having drunk sleepovers, it was just a friendship.
Even at my current job, now that I’m 20, I have a lot of friends that are 28-35ish. But it’s one of those things where we’re in the same situation, living in the same small town at the same job doing the same outdoor recreational activities. With the right people, it can work. But sadly there are so many creeps in this world.
