You've hit upon a significant incompatibility, and one which has the potential to damage or end your relationship. To be clear – he is not wrong for wanting to pursue his dream career. You are not wrong in wanting a partner with a less disruptive career. Worse, there was no ability to compromise where both of you get get some (but not all) of what you want, and some of what you don't. You got everything you wanted, he got none of what he wanted. This is a recipe for resentment, especially if he's feeling “lost” in what to pursue now.
I politely suggest that the compromise you are asking him to make for you is larger than you think. A lot of people view first-responder careers more as a “calling” than a career choice. Risking your life to improve your community is not something most people do for the money.
I wish I could offer you a solution, but unfortunately there isn't an easy one here.
