As an anime watcher, even im cringing. My advice is FIRM boundaries. Talk to him honestly and let him know his anime fantasies are a no go for you and you will never be comfortable indulging in these behaviors with him. Then its up to yall to decide if this is a big enough part of his life/personality to make you guys incompatible
You need to handle what you have going on at home first. Be open and honest about your feelings with your gf/wife and end things. Once the dust settles, you should get out and date because dating coworkers is never a good idea. Especially with you being her superior.
She may not be able to deal with stove and heating anymore.
If those are gas driven: don't let her stay alone anymore.

If she doesn't know anymore, what things are for, how spoon and fork are being used or how to put on a pullover… then it is really really high time to get her admitted to specialized care.

There are millions of people for you to have a relationship, leave this poor family alone, those kids are already going through enough dont add to it.
