Co-ed martial arts classes are very normal. The rest you mention does sound weird, but that’s not a flag at all. Neither is her comment about hitting: in the context of a martial arts class, men holding back against women is a bad thing because (a) it means they’re not really learning as they should , making lessons useless for self defense and (b) it means the men aren’t treating them with respect. Martial arts loses much of its practical application if the classes don’t include all genders.
There isn’t much you can do about who your adult son dates. If she exhibits controlling behavior, maybe gently raise that concern, but generally the more you say against a relationship the more you’ll push him further into it.
