I guess, and it has to be that way right? This is an advice forum after all. If your friend was dating someone who had a “boundary” where their partner was not allowed to gain any weight, for instance, would you tell them it’s reasonable because it’s simply this person expressing their preference to not date people who do such things?

I think your boyfriend is being unreasonable. Having to now micromanage your dad’s angry outbursts and your boyfriend’s sulking over nothing makes your interpersonal life twice as difficult. Having a problematic parent is not that unusual.
Why does he need your dad to know? Protecting your freedom to have a car and study so you can go out into the world with and education is a good priority. Your boyfriend should be supportive of that decision.
Why is his father taking a position on the issue at all? It seems like he’s encouraging your boyfriend’s attitude? He should just butt out.
Obviously lying to your dad isn’t great, but you’re doing it with good goals in mind. In the end it’s not really fair that you’re having to manage your dad at just 19.

Are you guys in North Carolina? It's one of the few states that requires living separately for a year to grant divorce. However, the law allows occasional sexual relations as long as they don't online together again.
I'm a parent and a stepparent. All kids receive the same amount of love but sometimes that love manifests itself differently. Whether they're biological or not, every relationship is different. I have two bonus daughters and I love them just as much as my biological son. Getting other sets of parents in the mix can be annoying at times but it's worth it.
