Its because your (ex)fiancé is tried of being second best and how is boundaries ate being trampled on. He had to make this clear because he can no longer stay in a relationship where his partner is not 100% committed to them. Its not a power move, it way for him to cut you off completely if you choose your ex (which looks like what you would do).

So she has profusely apologized and said that if I did that she’d be livid BUT she wouldn’t break up with me. She’s offered to block the guy on socials but I really don’t see what that matters or does because that can be changed back in a second. Idk everything else about her is great but I’m just not sure what steps are needed to fix things
