There are ways to remove metadata, but you have to know how to do that. Using a third party app could also remove metadata, like a photo editing app or something. But simply copying a file from one Apple device to another does not automatically remove the metadata. In this case, she’s not even saying the video was copied. She’s saying it downloaded onto her phone from the cloud (which is still suspicious imo), and that definitely wouldn’t remove the metadata.
