Of course she is overreacting. She should be happy you have time with your friends. Especially since she has other options for getting to the airport.
My first thought is maybe she feels unappreciated overall in your relationship, and this is just an instance where it reinforced that thinking. Because otherwise this really isn't a big deal and most people are independent enough that this wouldn't be an issue for them. She needs to not be so self-centered and put her big girl panties on and deal with it – as you said – roll with the punches.
My second thought is she is high functioning autistic or just doesn't deal with changes to plans very well. Or she has insecurities related to ubering or asking for help from others, or driving herself to the airport. But she should be understanding and not guilt you if this is something special, and isn't part of a pattern you have of ignoring her.
