Was your husband shady for switching out the coffee, yes. However, maybe he thought he was doing something to help you, because your depression is affecting him too, and he didn't feel like you were doing anything to help yourself?
The laughing about it with his brother sounds like a dumb thing to do, but my suggestion is to talk to him about why he did it.
