You've got two possibilities here. One is your bf is purposefully and strategically doing this to disrupt your sleep. Individual motivations vary, but it's generally about control and is very unlikely to be the only kind of abuse.
The second is a sleep disorder. My dad, at sister, and I have a history of being able to hold a conversation while asleep, but won't remember a thing once we're actually awake. Some people get night terrors, and have trashed rooms from moving around while having a nightmare.
Either way, you two should start sleeping apart until this gets sorted.

I have a similar issue right now of time and needing to slow down a bit. The situation is quite different from yours but essentially I’m not adding any unnecessary pressure. No one is obligated to spend time meeting/talking with someone they aren’t dating, and not losing sight of that removes the burden from you.
So, give her space. If you really feel something deep and it was there on her end, maybe shift to building a friendship (it’s bullshit if anyone tells you this is a bad thing, being friends first is so important). If it was a rush of emotions and you aren’t that pressed to be around her and be patient, I’d say move on
