There are a lot of legal aspects that would be automatically set once married instead of a lot of forms that need to be filled to give rights to a long time partner.
But besides that, I think a lot of people have a traditional view on marriage being a true commitment and being more serious than a long-time partner. And also just wanting to commit officially to someone on paper and in the eyes of friends and family.
