This is super, super, super common. Like it's the normal way this plays out and it would be weird if you had more success than she does. Women in these situations always have more success than the men. You should probably join some group for people in open marriages or poly to discuss this with other men, since most of them are in the same circumstances.
So many years ago I saw my friend's girlfriend out at a pool hall on a double date with a friend of hers (who I had also met) and two random guys. She saw me, gave a nervous smile and a wave and I waved back. It was late, I was heading home, maybe 1am.
So the next morning I call my friend around 9am and he immediately says, 'Oh so-so told me she saw you last night while she was out with friends'.
She had called him early, like 6:30 AM on a Sunday morning. I mentioned that it looked like they were on a double date but her assured me they were just classmates.
The point is the damage control had done its job, my friend felt like his girlfriend had done nothing wrong because she had been totally honest with him.
Now what I saw was her date sitting on a stool, his legs man spread and her backed up between his knees with his arms around her. It looked like the kind of cuddling you do on a romantic date, not something you do with friends.
But to my friend, he already knew everything.
I just include this story, because sometimes people use the cover of 'being totally honest' to set in place a narrative that their partner will feel like some harsh truth he is hearing is not true and that he's already gotten the full story.
I suspect that more was going on than your girlfriend was letting on. I mean acting like a wingman to the point that a guy is trying to kiss you in your apartment is taking it pretty far. It likely didn't stop there. My guess would that she's told you just enough to make it seem like she sort-a-kind-a did the right thing incase anyone tells you what they saw.
