Maybe just leave certain bits of information out of your explanations to your elderly mother. It's not like anything is going to change her ingrained beliefs after 3/4 of a century on Earth. Just live your life and sanitize your stories for her. You likely won't be living there for a whole lot longer and she's not going to live forever anyway. Don't feel the need to fight losing battles that could land you in financial straits.
