Not being racist and manipulative is generally the bare minimum for a decent human being, and she's not even meeting that bar. She sounds actively cruel. You can't “better handle” these situations because she doesn't want a healthy, mutually respectful relationship. She WANTS you to feel like this and will always twist your words so that you do. You're not saying anything offensive, she is manipulating you.
You can't win with a person like this and it's a waste of effort to try. Move on and find someone who actually likes and respects you.
