So he's aware he does it, has no off button, and then gets mad when called out? Sounds like he has some sort of compulsion disorder.. adhd maybe?
But all of his thinking surrounding this is really fucked up. He was sooo sure they were going to offer him the job but did it not occur to him that they would call his references first? Talk to his current supervisor/manager? What about the health insurance? What is the overlap for that when changing jobs and did he consider that at all?? You say you don't have a lot in savings so what about the time between rage quitting and his possible start date at the 'new' job? Did he think it was okay to lose that income?
I feel like there has to be something else going on here. Is it possible that he fucked up monumentally at work and was about to be found out or was already on disciplinary action or a PIP or something? Did you ever have any inkling of the level of rage and hatred he felt for his workplace, coworkers and clients? I mean, standing on his desk, tossing his monitor, scaring the living shit out of everybody in the office with his intense and maniacal behavior, that doesn't come out of nowhere. That had to be bubbling pretty close to the surface for quite some time I would think.
If you're asking whether you're ready to reach out and are having trouble with the possibility of her dating someone else, you're likely not ready to reach out. I would just let this one go and focus on your continued healing, if you happen to stumble onto each other again in the future then so be it.
